Best roll cake/ ice cream cake recipe ever. I undertook this cake after I failed to order one my for sons birthday in time. Hands down the best thing that ever happened! I have been recruited to make this cake for every family gathering from now until forever. Love it. Always comes out great!


I tried it with the eggs + sugar, then salt and cream of tartar, then everything else method and it appears to have worked. Or, at least it worked well enough that there is a rolled ice cream cake in my freezer waiting for our barbecue tomorrow!


If I made this in a full size sheet pan instead of a jelly roll pan would I just need to double the recipe? Also, do you know if this recipient doubles ok? I think it would make a great birthday cake!


Just made two of these and they turned out awesome! There are a lot of steps, but the recipe is so easy to follow. Both of my cakes stayed intact and were pretty easy to roll up. I filled one with coffee ice cream and the other with vanilla and will be serving them at a birthday party this evening. I can already tell they will taste delicious as we snacked on the cake edges with a little leftover ice cream.


Just made two of these and they were delicious! No issues at all with the baking, rolling and unrolling. I made one with gluten free flour plus the cornstarch and vanilla ice cream and one with cake flour and mint cookie ice cream. I did end up using 4 cups of ice cream per roll, 2 cups was definitely not enough. This was such a fun recipe to make and I am looking forward to making many more this summer!


Turned out great, and much faster than my typical layered ice cream cake with Oreos. I used 1 quart of mint chocolate chip ice cream, which was just right. Let the ice cream warm up for 30 mins in the fridge while the cake cooled. Served with fudge sauce and sprinkles.


Not sure where I went wrong. I followed the recipe exactly, but it fell apart as I tried to roll it. The cake was really stuck to the dish towel! So, should I have waited for it to cool longer before rolling it up in the towel? Should I have waited longer to unroll it? Should I have cooked it longer?


For those that are trying this the first time: make sure the amount of ice cream applied equals the thickness of the cake. I pulverized approximately 5oz. of Oreo thins in the food processor. They were spread on top of the ice cream and then rolled. The sweetness of the Oreo cream boosted the overall flavor. Or of course, use Oreo ice cream. I made this and despite my underbaking it the flavor was phenomenal. However, we wanted more cake, I wonder if I could increase it 1 1/2x or even double it and still bake it in a jellyroll pan? Any thoughts?


A Chocolate Peppermint Ice Cream Cake Roll made by rolling a chocolate sponge cake around peppermint ice cream then drenching it with a rich chocolate glaze, and finishing with a sprinkle of crushed peppermint candy.


When spreading the cake batter into your prepared pan, make sure to spread it as evenly as possible. If the edges are too thin, they will bake up as a crispy cookie rather than a cake. Then when you go to roll the cake the edges will crumble.


Then, run a knife around the edges of the pan to make sure the cake is not stuck to the pan. Then quickly invert the cake so it comes out onto the dishtowel, remove the parchment, and immediately roll the cake.


Fold the bottom of the towel over the short end of the cake and roll the dish towel and the cake into a log. Set the rolled cake so it sits on the seam, which will help seal the cake later. Allow it to cool like this.


The second roll is the ice cream roll. First, take your ice cream out of the fridge to let it soften up a bit. It should be soft but not melted. You will use the full 1 quarts of ice cream for this recipe.

I saw this recipe in Family Circle Magazine and knew I had to make it. A chocolate cake rolled up with ice cream inside, my goodness, what could beat that!! Except for maybe cabana boys serving you a fresh pineapple mango daiquiri while you bask in the hot sun on a beach in the Bahamas.


You can most definitely purchase any ice cream flavor of your choice for this cake. Ideally, ice cream packaged in a rectangular shaped container is ideal since you can slice it and place it on your sponge in order to roll the cake.The following are step by step instructions with images to guide you through this recipe. Remove the carton of Neapolitan flavored ice cream from the freezer and slice with a sharp knife into roughly half inch slices.Use a spatula to transfer slices of ice cream onto the sponge. Leave a 1-inch border at one of the short ends as the ice cream tends to ooze out when you rolling. I used about 3/4 of the ice cream. package. Return unused ice cream to the freezer.


Carefully lift one short edge of the parchment paper and slowly, as tightly as possible, roll the cake using the parchment paper to guide you along. If some of the ice cream oozes out at the opposite end simply remove the excess with your spatula. Dust the top with more powdered sugar to avoid sticking to the parchment paper.


In our family, we like to use one flavor of ice cream in the middle and then another on the outside, so that you get double the ice cream fun. But, if you prefer, you can also just use ice cream inside the roll and then top it with powdered sugar, just like you would use on a traditional jelly roll cake.


Once the bake is barely warm, gently, but tightly roll the cake lengthwise (so it will be a long, narrow roll at this point). Fold the ends of the paper in to enclose the cake and refrigerate until you are ready to assemble the cake.


To assemble the cake, take the ice cream out of the freezer to soften. When it is spreadable, gently unroll the cake and remove the parchment paper on top. Spread the ice cream or sorbet flavor that you want on the inside of the cake in an even layer.


Then gently roll the cake, removing the bottom piece of parchment paper as you go. Move the rolled cake to your serving platter and cover the outside with your second flavor of ice cream or sorbet, if you are using. Or, if you are using powdered sugar, stop here for now.


To keep this cake roll 100% easy I used a box mix for this recipe. If you have a chocolate jelly roll cake recipe you prefer to use by all means use it. But in the interest of saving time and making the perfect cake, I used a Betty Crocker Cake Mix.

A chocolate roll cake is a thin, sponge cake that is delicately rolled up and filled. The filling can be whipped cream, buttercream, jelly or ice cream (like in this Oreo Ice Cream Cake Roll). Chocolate cake rolls are simple to make but the thing to remember is you have to make sure you give yourself some time.


To make this ice cream cake roll, start by making your cake. Egg yolks are whisked with sugar until thick. In a separate bowl, whisk egg whites until semi-firm peaks begin to form. Slowly add sugar until the egg whites form glossy, stiff peaks, then the yolks are folded in. Dry ingredients (flour and cocoa powder) are folded in next. The batter is poured into a jelly roll pan and baked for only 12 minutes (the cake will spring back when touched).


I find the best way to prepare the ice cream is to allow your store-bought ice cream (homemade is fine, I find that homemade ice cream tends to have a softer consistency) has to come to room temperature for about 15 minutes. When the cake roll has cooled completely, carefully unroll the cake and spread the ice cream over the inside of the cake with an offset spatula. Reroll the cake, and freeze the cake to have the ice cream set up again.


The glaze or ganache on this cake has heated heavy cream poured over chocolate then whisked until thick. Once the mixture begins to set, pour the ganache over the cake. Freeze the cake until you are ready to serve!


When cake has cooled completely, carefully unroll cake. Spread softened ice cream over the inside of the cake and reroll. Place filled cake seam side down on a wire rack that is resting on a baking sheet and freeze until set (at least 15 minutes).


When I was a teenager I made ice cream roll cakes at least once a week. My parents almost never bought sweets, so we all devoured the homemade desserts my mom and I made. The freezer was always stocked with ice-cream, so I guess I was doing something right!


I realize there are a lot of nostalgic ties to Little Debbie treats. People have strong opinions about their favorites. My review aims to evaluate each ice cream for its overall representation of the snack cake and the total quality as a stand-alone ice cream. I purchased as many of the accompanying snack cakes as I could find but could not track down a Honey Bun or Swiss Roll IRL. (Supply chain shortages, UGH!)


My favorites are The Cameo Clutch, and The Society Satchel in Plum Tart cake. They look like alice in wonderland to me, so pretty. Anyway that black forest whip cream cake looks pretty yummy. I might try make it sometime.
